Easy and Delicious Very Berry Crepes

Today I have another little recipe to share: cream cheese and berry crepes. I think it might be considered to be a bit out of season, but at the end of the day, a sweet crepe is enjoyable all year long, don't you think so? I personally have a very sweet tooth, and I never say no to something creamy, sweet and delicious.

These crepes are very easy to prepare, and believe me they are super yummy. Once you try them once, you'll come to them over and over again. Here is the recipe:

For 6 crepes
500 ml milk
250 gr flour
3 eggs
mixed strawberries and blueberries (frozen berries will do as well)
2 tablespoons sugar
a few drops of vanilla extract
250 gr cream cheese
250 gr whipping cream

First of all let's prepare the crepes. In a bowl mix the eggs with the milk, and then add slowly all the flour. Cook them normally in a non sticky pan, and set them aside.

Then move to the berry compose. Cut the strawberries in small pieces, and add them to a frying pan, together with the blueberries. Add a tablespoon of sugar, and let them cook at a very low temperature until they become melted, like a jam. It won't take too long, just make sure you mix them often, so that they won't stick to the pan. When it is ready set aside and let it cool.

Into another bowl pour the whipping cream and with an electric mixer make it fluffy. Add the cream cheese and the sugar, and mix them all well.

When the berry jam is cooled you can mix it with the cream, and fill your crepes with it. To garnish, cut in small pieces a few more strawberries, add a few blueberries and place them on the top of the rolled crepes. Let them stay in the fridge for an hour before eating them, in this way the cream will compact and be even yummier.
