Celebrating Autumn: Pumpkin Pecan Pie



Autumn Celebration continues! After having talked about some beauty products I am loving right now, all of which pumpkin based (you can see the post just here), today we talk about another way of celebrating the copper season: by food.

I've been wanting to prepare a Pumpkin Pie since forever, but for some reason or another I never managed to. Well, this moth I finally decided to get all the ingredient and prepare one, so if you would love your kitchen to smell like cinnamon and spices for the whole day, and you'd like to feel the taste of autumn in your mouth, prepare a Pumpkin Pie with me!

Ingredients:
400g pumpkin (or butter-squash)
150g dehydrated milk
2 eggs
1 tablespoons pumpkin spice mix
2 tablespoons maple syrup
150g pecans
1 shortcrust pastry roll

How to proceed:
First of all, let's cut our pumpkin (or a butter-squash will do as well) into small pieces, and let's boil them. When they are soft, drain them and let them cool on a side.
Once they're cool down we can process them with a food processor (or a blender) until nicely smooth. Of course, if you're lucky enough to find pumpkin purée in a tin in your local store, feel free to use that one and skip all of those passages.



Once the pumpkin is in its velvety purée form, we can add the two beaten eggs, the milk, the spices and just 1 tablespoon of maple syrup. Transfer your shortcrust pastry into a baking tray, and fill it in with the pumpkin cream obtained.

Let it cook in a pre heat oven at 180 degrees for 40 mins, or until the filling will be firm. At this point, take it out of the oven and cover it with the pecans coated with the remaining 1 tablespoon of maple syrup. Put the pie in the oven again and let it cook for another 20 minutes.

Let the pie cool down and serve it with whipped cream. Autumn in a plate, seriously. It is so so yummy, I truly hope you're deciding to try it out and share your results with me!
