Roasted Chicken: Never been so easy!
A recipe again! Feels ages since the last time I wrote about one.
Truth is, I didn't really experiment that much, nor have I tried out
some new delicious dishes. Until today of course. The recipe I am
going to talk about – which is obviously, very easy and quick to
prepare, like all the other little recipes I am posting on these
pages – is a tasty one pot recipe. It is perfect for those days
when you have little time, you're just back from work, you're tired
and only dream about your bed, but you're also hungry like a lion
(and your other half is too probably). There is a yummy roasted
chicken with potatoes!
INGREDIENTS:
(for 2 people)
4 chicken thighs
5 tomatoes
1 onion
1 spoon of olive oil
10 small potatoes (or less if you're using normal size ones)
salt, pepper, powder garlic, mixed herbs
a few basil leaves
Now, here is how to proceed: first of all, pre heat the oven at 180°.
Then take a fairly big
bowl, and pop in the onion cut in chunks, tomatoes and potatoes also
cut into pieces. Pop into the 4 chicken thighs as well, and then
season everything with salt, pepper, garlic powder, mixed herbs and
olive oil. Mix everything with your hands, and transfer the
ingredients into an oven tray. Sit the chicken on the top of the
other ingredients, and then sprinkle some basil leaves to give a
beautiful perfume and flavour.
Pop it into the oven, and let it cook for about 45 minutes. When it
is half done go and check if you need to add a bit of water (in case
it is drying out and the vegetables sticking to the bottom).
Wait until the chicken is beautifully cooked and the skin has become
a lovely golden brown colour. Take your plates, serve and... enjoy!
